3 NATIONAL CHAMPIONS AND LOTS OF WINNERS @ FOOD AND BEV LIVE 2014...
The winners of the skills competitions at a packed Food & Bev Live 2014 have been decided…. The great and the good of the Irish foodservice industry made their way to Citywest Event Centre today (11th Feb) for one of the biggest industry gatherings of the year FOOD & BEV LIVE 2014. |
In a hall brimming with the buzz of networking and new business there was also the excitement of a selection of national Irish skills competitions to behold, with the anxious finalists at last getting their chance at the much sought after titles.
The Speciality Coffee Association of Europe (SCAE) hosted the finals of the Irish Barista Championship with the winner Pete Williams from 3Fe cafe going on to compete in the World Barista Championships taking place at the SCAE World of Coffee in Rimini, Italy in June 2014. This years Avonmore Irish Latte Art Championship was also staged heralding its 2014 winner in the form of Elvis Seivijus Matiejunas from Bewleys.
Open to all bartenders working in Ireland, the National Cocktail competition was staged by the Bartenders Association of Ireland (BAI) (sponsored by Edward Dillon & Co. Ltd). The winner Eddie Rudzinskas was crowned National Cocktail Champion 2014 and will represent Ireland at the World Cocktail Competition in Capetown, South Africa 29th Sept - 4th Oct 2014.
On the chefs side, renowned chef Derry Clarke resided over the very first “Sodexo Challenge @ F&B Live”. For the event, Sodexo Ireland commissioned Derry Clarke, to set a culinary challenge for selected members of the company’s 500-strong chef team called the Sodexo Chefs Challenge. The challenge gold medal winner was David Fountain.

Following the success of the Euro-Toques Young Chef of the Year 2013, which has highlighted the emergence of interesting trends in the interpretation of food memories, Euro-Toques will offer demonstration on themes that are trending in the culinary world.
The Young Chefs participating will do a demo on vegetarian dishes, reproducing the recipes they prepared for the competition in November 2013.

COOKING UP A STORM FOR DERRY CLARKE AT FOOD & BEV LIVE 2014

commissioned Derry Clarke to set a culinary challenge for selected members of the company’s 500-strong chef team. One of Ireland’s most famous chefs, Derry has been a consultant with Sodexo Ireland for five years and is involved in the company’s culinary craft development programme.
Six of Sodexo's finest award-winning chefs will take part, competing against each other for the title of over all winner of the Sodexo Derry Clarke Culinary Challenge, by cooking a three-course meal for four people in two hours. The chefs are: Dennis McCarroll based at Almac in Craigavon, Timothy O’Connor at Aughinish Alumina in Limerick, Diarmuid Murphy at EMC in Cork, Bartek Piatek at Leo Pharma in Dublin, Eoin Murtagh at Davy in Dublin and David Fountain at PayPal in Dundalk.
In preparation, the competing Sodexo Chefs attended a Cookery Masterclass with Derry at his Michelin starred restaurant, L'Ecrivain, in Dublin. For the Challenge, they will have to replicate Derry’s dishes from that Masterclass while adding their own style and twist.
Derry will also chair the judging panel for the Challenge and his fellow judge will include…(Derek Reilly). The winner will be announced after the competition at a gala dinner that evening at the Red Cow Hotel.

Six of Sodexo's finest award winning chefs will take part in the Derry Clarke Culinary Challenge Food & Bev Live 2014 competing against each other for the title of Derry Clarke Culinary Challenge Champion.
The challenge will comprise cooking a three course meal for 4 covers in a 2 hour competition.
The competing Sodexo Chefs attended a Cookery Masterclass with Derry in his Michelin star restaurant L'Ecrivain on Thursday, 28th November in preparation for the main event at Food & Bev Live. Each chef will replicate Derry's dishes from the Masterclass adding there own style and twist.

With the retention of the 9% VAT rate giving a confidence boost to our sector with the RAI saying that 70pc of restaurants reported the reduction of the VAT rate in 2011 had helped business, with 30pc directly attributing the VAT reduction to hiring new staff, this is the perfect time to launch this new feature.

The 2013/14 Irish Barista Competition is just around the corner, and the SCAE has now finalised details of this year's judging workshop and would like to invite you once again to attend.
The aim of the workshop is to further raise judging standards for this competition. The course comprise both theory and practical- with a strong focus on the sensory understanding and on scoring techniques.
The workshop will be held at Marco Beverage Systems Ltd. (74 Heather Road, Sandyford Industrial Estate, Dublin18) on the 31st of October 2013 (Thursday).

Brigitta will explain how she has fostered relationships with foodservice operators and the consumer. Over 30,000 tourists visit the Burren Smokehouse annually and her produce is featured on menus in leading restaurants such as Fade Street Social and Avoca Handweavers.

Deirdre Byrne Wins Gold Medal for Ireland
Deirdre Byrne, the 2013 Irish Cocktail Champion has won gold medal at the 39th International Cocktail Competition which was held in Prague from 16th - 22nd August 2013. The cocktail 'Angel Fruit' gave Deirdre the gold medal in the 'Fancy Cocktail' competition where Deirdre competed against International competitors from France, Uruguay, Hong Kong & Peru. |
